Family business


After the end of World War II, the management of the family business passed into the hands of the founder's son, Ernesto Illy. A graduate of the University of Bologna with a degree in chemistry, he mastered in practice many of his father's secrets of production. The high quality of Illy's branded coffee is achieved thanks to the meticulous selection of the product, carried out by the company's specialists. Coffee beans are purchased not on trading floors, but directly from the places of cultivation from Brazilian, Guatemalan, Ethiopian, Colombian producers. Hand picking the product ensures that there are no low-grade raw materials. The base variety of the proprietary blend is the Brazilian brand Santos. At the production site in Trieste, raw materials are analyzed in detail using modern methods, and in 1988 the company received a patent for a device for sorting raw materials that removes defective grains so as not to ruin the entire batch of goods.
